Outlook Email Integration - Requesting access to all mailboxes and profiles

A customer was testing the Outlook Email Integration sync and noticed the integration is requesting access to ALL mailboxes and profiles.  Is this expected?  The articles seem to imply that they can set criteria for which mailboxes and profiles get synced.  Do they have to grant all access first?
